Smoky Parmesan Chicken Hearth Rice
Candlelight, comfort, and a taste of Italy.
Two pans would make this easier. One makes it a date.
The spaghetti goes in dry and broken, and you stand over it until it turns the colour of toasted almonds. That is the whole trick, and it happens in the first three minutes, while somebody else is pouring the wine.

Smoky Parmesan Chicken Hearth Rice
Ingredients
- 1 cup uncooked long-grain white rice
- ½ cup dry spaghetti (broken into short pieces)
- 2 smoked chicken breasts (sliced or chopped)
- 2 Tbsp butter
- 1 Tbsp olive oil
- 2 ¼ cups prepared chicken broth (hydrated, not powdered)
- 2–3 cloves garlic, minced (optional)
- ½ cup heavy cream
- ¾ cup finely grated Parmesan cheese
- 1 Tbsp butter (for finishing)
- Lemon pepper or black pepper, to taste
- ½–1 tsp Italian seasoning or parsley (optional)
- Salt only after tasting
Method
- Toast the pasta Heat 2 Tbsp butter and 1 Tbsp olive oil in a large skillet over medium heat. Add the broken spaghetti. Cook for 2–3 minutes, stirring frequently, until the pasta becomes deeply golden.
- Toast the rice Add the uncooked rice. Cook another 1–2 minutes, stirring until the grains are coated in the butter and beginning to toast. If using garlic, add it during the final 30 seconds.
- Add the broth Pour in 2 1/4 cups prepared chicken broth. Bring to a boil. Reduce the heat to low, cover, and cook for 15–18 minutes, until the rice is tender and most of the broth has been absorbed. Try not to stir repeatedly.
- Bring in the chicken Once the rice is nearly finished, fold in the two chopped smoked chicken breasts. Cover and cook another 2–3 minutes to warm through.
- Make it creamy Reduce the heat to very low. Fold in 1/2 cup heavy cream, 3/4 cup Parmesan, and 1 Tbsp butter. Stir gently until the Parmesan melts and the sauce becomes silky and coats the rice and pasta.
- Finish to taste Add lemon pepper or black pepper. A little Italian seasoning or parsley works beautifully here as well. Taste before adding salt. The smoked chicken, prepared broth, and Parmesan can already provide plenty.
Tips & Variations
- Use leftover roasted or grilled chicken if smoked chicken isn’t available.
- Try different cheeses (a mix of Parmesan and Romano is excellent).
- Add sautéed mushrooms or spinach for extra depth.
- If it becomes too thick, add a splash of warm broth, milk, or cream.
- Lemon pepper adds a bright, delicious finish.
- Keep salt light at first, then adjust at the end.
Our Date Night Note
This dish sits between things. It’s not quite pasta. It’s not simply rice. It’s not exactly Alfredo. And it’s not ordinary Rice-A-Roni. The toasted spaghetti gives structure and nuttiness. The rice carries the broth. Smoked chicken brings fire and depth. Parmesan cream takes those separate elements and makes them taste like one dish.
