Fire, Anchor & Bridge — one meal, three preparations

Three parts. One purpose.

Three separate preparations, made to be cooked as one meal: seared chicken, peppers and onions; a golden herb and grain rice; and a creamy lemon-saffron gravy. Each stands on its own. Together, they are one table.

The same cast-iron skillet carries all three. The chicken is seared first and set aside; the peppers and onions cook in what it leaves behind; the chicken returns; and once the Fire is set aside, the Bridge is built from that same skillet—deglazing the very fond the chicken left. Cook each part on its own if you like, or follow them in order and let the pan’s memory carry all the way to the gravy.

Fire

Ember’s Sunfire Chicken, Peppers & Onions

Simple. Seared. Full of flavor.

Ingredients

  • 2 lbs chicken breasts, cut into bite-size pieces
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 2–3 Tbsp olive oil or butter
  • Salt, to taste
  • Lemon pepper, to taste
  • Italian seasoning, 1 tsp
  • Thyme, ½ tsp

Method

  1. Pat chicken dry. Season with salt, lemon pepper, Italian seasoning, and thyme.
  2. Heat oil or butter in a cast iron skillet over medium-high heat. Sear chicken until browned and cooked through. Remove and set aside.
  3. In the same skillet, add a little more oil if needed. Sauté onions and bell peppers until soft and slightly caramelized.
  4. Return chicken to the skillet. Stir to combine. Set aside while you prepare the gravy.

Sear builds memory.

Anchor

Ember’s Golden Harvest Herb & Grain Rice

Golden. Fragrant. Anchoring.

Ingredients

  • 1 cup white rice
  • 1 cup brown rice
  • ½ cup Job’s tears
  • 6 cups water (or as needed for your rice cooker)
  • 1 tsp turmeric powder
  • 1 tsp lemon pepper
  • 1 tsp Italian seasoning
  • ½ tsp thyme
  • 1 tsp soy sauce
  • 1½ cups water or chicken broth
  • Salt, to taste

Method

  1. Rinse all grains well. Soak in hot water for 2 hours. Drain.
  2. Add grains to rice cooker.
  3. Add water or broth, turmeric, lemon pepper, Italian seasoning, thyme, soy sauce, and salt.
  4. Stir gently to combine.
  5. Cook using your rice cooker’s mixed grain or regular setting. Let rest 10 minutes, then fluff.

This is the anchor.
Golden, grounded, and able to hold
everything together.

Bridge

Ember’s Sunfire Creamy Lemon-Saffron Gravy

Bridges flavor. Brings it home.

Ingredients

  • 4 Tbsp butter
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • ½ cup homemade Golden Dragon Mayo
  • ½ cup water
  • 1½ tsp saffron extract
  • 1 tsp lemon pepper
  • 1 tsp Italian seasoning
  • 1 tsp thyme
  • 2 tsp lemon juice (or ACV)
  • 2–3 Tbsp cornstarch (plus water)
  • Salt, to taste

Method

  1. In the same skillet, with the browned bits remaining, melt butter over medium-low heat.
  2. Add garlic and sauté 30 seconds. Deglaze with a splash of water.
  3. Lower heat. Add cream, mayo, saffron extract, lemon pepper, Italian seasoning, and thyme. Stir.
  4. Add lemon juice. Let it simmer gently.
  5. Mix cornstarch with water. Slowly add to the sauce, stirring until thickened to a gravy consistency.
  6. Taste. Adjust seasoning if needed.

This is the bridge.
Creamy, bright, and rich with memory.
