Chicken and broccoli folded into yesterday’s rice and cooked-down cabbage, brightened with saffron and herbs, and finished creamy—like risotto, but with distinct grains.

The Recipe

Ingredients

  • 2 chicken breasts, cut into bite-size pieces
  • 3 cups cooked leftover rice
  • 3–4 cups cabbage, thinly sliced
  • 2–3 cups broccoli florets
  • 3 Tbsp butter, divided
  • 3 cloves garlic, minced
  • 1 small onion, chopped (optional)
  • 1–1½ cups chicken broth
  • ½ cup cream or whole milk
  • ½–¾ cup Parmesan, finely grated
  • ½ tsp saffron extract, or a generous pinch of saffron threads steeped in 2 Tbsp hot broth
  • ½ tsp dried thyme
  • ½ tsp parsley
  • ½ tsp rosemary, crushed very finely
  • Lemon pepper, to taste
  • Salt, only after tasting

The Gold of Saffron

Saffron brings sunshine to the table—aroma, color, and warmth that turns simple ingredients into something special.

Ember’s Tip

  • Don’t overcook the broccoli. Add it late so it stays bright and tender.
  • Taste before salting. Chicken broth, Parmesan, and lemon pepper may already provide enough.
  • Add broth a splash at a time if the rice looks too thick.

Hearth Method

1. Brown the Chicken

Season chicken with lemon pepper. Heat 1 Tbsp butter in a large skillet or cast iron over medium-high heat. Sear chicken until golden on the outside. It doesn’t need to be cooked through. Remove and set aside. Leave the browned bits in the pan.

2. Cook Down the Cabbage

Add 1 Tbsp butter, then the onion and cabbage. Cook 8–10 minutes over medium heat until soft and beginning to brown. Add garlic, thyme, parsley, and rosemary. Cook 1 more minute.

3. Make It Golden

Pour in 1 cup chicken broth and scrape up the fond. Stir in saffron. Add the leftover rice and mix well. Simmer 5 minutes, adding more broth if the rice is very dry.

4. Broccoli Goes in Late

Add broccoli and the browned chicken. Cover and cook 5–7 minutes, until broccoli is tender-crisp and chicken is cooked through.

5. Make It Creamy

Lower heat. Stir in cream (or milk), Parmesan, and 1 Tbsp butter. Fold gently until creamy and loose—like risotto, but with distinct grains. Add broth as needed.

6. Taste Before Salting

Taste and adjust only if needed. Serve warm. Let the saffron, herbs, and lemon pepper shine.
