The Recipe
Serves 6–8
The Hearth
- 1 kg boneless chicken thighs, cut into chunks
- 2 medium onions, diced
- 5–6 cloves garlic, minced
- 3 medium tomatoes, chopped
- 3 carrots, sliced
- 3 Tbsp butter, ghee, or olive oil
- 1½ – 2 cups chicken stock or water
The Flame (Spices)
- 3 Tbsp curry powder
- 1½ tsp ground cumin
- 1½ tsp paprika
- ¾ tsp turmeric
- ¾ tsp ground coriander
- ¾ tsp black pepper
- 1½ – 2 tsp salt
- ½ tsp cayenne or chili flakes (optional)
To Finish
- ¾ cup coconut milk or heavy cream (optional)
- 1½ tsp lemon juice or apple cider vinegar
- Fresh herbs, if available
Build the Fire
- Heat the butter, ghee, or oil in a large heavy pot over medium heat.
- Add the chicken and brown for 4–5 minutes. It does not need to cook all the way through.
- Add the onions and carrots and cook for about 5 minutes.
- Add the garlic and cook for another 30 seconds.
- Stir in the curry powder, cumin, paprika, turmeric, coriander, black pepper, and optional chili. Cook the spices in the hot fat for about 30 seconds.
- Add the tomatoes and cook for 4–5 minutes, until they soften and begin forming the curry base.
- Add enough stock to almost cover everything.
- Bring to a gentle boil, then reduce to a simmer.
- Add your chosen low-carb vegetable (see below). Cover and cook until the chicken is tender and the vegetables are cooked through.
- Remove the lid and simmer another 5–10 minutes if you want the curry thicker.
- For a creamy version, stir in the coconut milk or cream during the final 5 minutes.
- Finish with the lemon juice or apple cider vinegar. Taste and adjust the salt.

Reduce the stock to 1½ – 2 cups, especially with zucchini, as these vegetables release water while cooking.
