A cinnamon friendship loaf built differently: ground almonds, cultured sourdough starter, applesauce, eggs, butter, and allulose.
The cinnamon begins bitter and strong, but given warmth, it opens into something fragrant and deep. Much like adversity itself, what first seems harsh can become part of something richer when we pass through it together.
Ingredients
- 1 cup finely ground almonds
- ½ cup cultured sourdough starter
- ½ cup unsweetened applesauce
- 3 large eggs, separated
- 1–1½ Tbsp melted butter
- ⅓ cup allulose
- ½ tsp vanilla extract
- Cinnamon, to taste
- Pinch of salt
No psyllium husk needed.
Make the Almond Base
Grind the almonds very finely.
Combine the ground almonds with the ½ cup applesauce and blend until the almonds form a moist, relatively smooth mixture.
The applesauce replaces the extra liquid previously needed to get the almonds moving in the blender while also contributing fruit, fiber, pectin, and a little natural sweetness.
Build the Loaf
Separate the three eggs.
Add the 3 egg yolks to the almond mixture along with:
- Sourdough starter
- Melted butter
- Allulose
- Vanilla
- Salt
- Cinnamon
Mix until thoroughly combined.
The batter should be moist and fairly substantial but not stiff.
Give It the Sunrise
In a clean bowl, beat the 3 egg whites until they reach stiff peaks.
Stir a small spoonful of the whites into the almond batter first to lighten it.
Then gently fold the remaining whites into the batter in 2–3 additions.
Don’t aggressively mix them in. Those tiny pockets of air are what give Cinnamon Sunrise its lift.
Transfer gently to a buttered small loaf pan.
Bake
Bake at:
350°F / 175°C
for approximately 35–45 minutes, or until the center is set and a tester inserted into the loaf comes out mostly clean.
Allow it to cool before slicing. The interior will continue setting as it cools.
The finished loaf should be moist and cohesive, somewhere between a traditional quick bread and a light cultured almond loaf.
Serve at Sunrise
Serve warm or lightly toasted with:
- Butter
- Cinnamon butter
- A little honey for those who want additional sweetness
- Cream cheese
- Tea or coffee
The loaf itself stays moderately sweet with ⅓ cup allulose, allowing the cinnamon, almond, apple, and cultured starter to remain noticeable.
Why It Is a Bridge
A friendship loaf isn’t really about bread.
It’s about what passes between two people.
The starter moves from one kitchen to another. Cinnamon brings bitterness and fragrance together. Cultured sourness meets sweetness. And something made by one pair of hands is broken and shared with another.
The Fire Swamp isn’t beautiful because adversity is beautiful.
What matters is discovering who is still walking beside you when you reach the other side.
The fire was never the friendship.
Coming through it together was.
